The pandemic led to double-digit sales growth of retail cheese in 2020, according to Mintel's " US Cheese Market
Report 2021. " While that growth slowed in 2021, sales still outperformed the previous year. Cheesemakers kept the
momentum by offering new forms, sizes and types, many of which addressed the growing snacking occasion. The
biggest challenge to the cheese category may be one of its biggest strengths, namely that only 5% of consumers
are unengaged with the category, according to Mintel research. This leaves cheese brands with little choice but to
increase frequency or usage occasions. And recent innovations are doing just that.
Cotija cheese
Gayo Azul is a Caribbean Hispanic cheese brand with a strong Dutch
influence and a rich history dating back to the 1950s. It is owned by
FrieslandCampina, Paramus, NJ, and has been available in the United
States since the 1960s. The company's newest offering is Gayo Azul
Cotija cheese, which has a sharp, slightly salty flavor with a firm,
crumbly texture. This Mexican-style aged, fresh cow's milk cheese is
used as a topping for enhancing any dish, everything from enchiladas
to street corn to sandwiches. The cheese comes in an 8-oz wedge.
Collection of classic Italian cheese
With its 100th year on the horizon, Stella Cheese, a brand of Saputo
Dairy USA, Lincolnshire, Ill., is preparing for its milestone birthday with
the launch of the Stella Import Collection of classic Italian cheese. The
brand is going back to its roots to reintroduce two classics that have
stood the test of time: protected designation of origin (PDO)-certified
Parmigiano Reggiano and Grana Padano cheeses imported
from northern Italy. The new imported Parmigiano Reggiano comes
in wedge and shredded cup formats. It is aged an extra 10 months
to allow for increased flavor development. The Grana Padano cheese
wedge has been aged an extra five months to give the cheese " medium
seasoning " that has a mellow, nutty profile.
