COMMENTARY
Eyes on
the future
Welcome to Dairy Processing's inaugural State of the
Industry issue.
Bringing this issue together has been an exciting
endeavor. Our goal was to take a broad look, a 30,000-footoverview,
of the dairy industry as it currently stands, but
more importantly, where it's headed.
Consumers have higher and higher expectations of dairy
in today's market. Brands are expected to be innovative
and creative, making products that not only taste good, but
are good for our health and good for the planet. That's no
easy task.
But in the pages of this issue, you will find that the
industry is up to the challenge. Each and every day,
processors are taking the opportunity to demonstrate
the ways in which they are stewards of the environment,
communities and people.
It's impossible to ignore that the industry is changing,
oftentimes at a breakneck pace. The need to modernize
facilities and operations isn't optional anymore, it's a
necessity. New product innovation is challenging traditional
dairy to keep up with consumers trends and is making room
for plenty of new up-and-comers.
Sustainable practices and playing a
role in the industry-wide effort to cut
carbon emisssions is non-negotiable
in the eyes of many.
The past three years have
also shown that sometimes the
greatest opportunities come from
the unexpected.
Every day there is work to be
done and decisions to be made. The
future is never completely clear, but for dairy, it certainly
looks promising.
