isotonic relies on permeate, which is a co-product of the
production of protein-containing dairy ingredients, such as
whey protein concentrate, whey protein isolate, ultrafiltered
milk, milk protein concentrate and milk protein isolate.
Permeate is typically void of fat and has a minimum of 59%
lactose (but sometimes as much as 85%) and a maximum of
10% protein and 27% ash. The permeate in GoodSport has
been ultrafiltered to remove all protein; however, because
there may be some residual protein, anyone with a dairy
allergy should avoid the beverage.
GoodSport's patent-pending formula and process
cracked the code to provide naturally
powerful hydration in a clear and
thirst-quenching beverage. It delivers
three times the electrolytes and
33% less sugar than traditional
sports drinks, Ms. McBride, said.
The addition of the lactase enzyme
converts lactose-a disaccharide
unique to all mammalian milk-to the
monosaccharides glucose and galactose,
which are sweeter than lactose. This conversion, and the
addition of some monk fruit and erythritol, allows for a
no-added-sugar claim. All ingredients are from natural
sources and the beverage provides a good source of
calcium and an excellent source of B vitamins. Shelf-stable
GoodSport comes in four flavors-citrus, fruit punch, lemon
lime and wild berry--in 16.9-ounce bottles.
Kimberlee (K.J.) Burrington, director-training, education
and technical development, American Dairy Products
Institute, Elmhurst, Ill., assisted Ms. McBride with product
development when working at the Center for Dairy
Research at the University of Wisconsin-Madison. She

recent
rollouts
Several new dairy drinks have hit the market
recently. Nestlé Health Science, a wholly-owned
subsidiary of Nestlé USA, Arlington County, Va.,
is introducing Carnation Breakfast Essentials
Flavored Nutritional Drinks in Froot Loops, Krave,
Frosted Flakes and Golden Grahams varieties.
Milk protein concentrate is a key ingredient. Each
8-ounce shelf-stable bottle contains 10 grams of
protein and 20% or more of the Daily Value for 21
vitamins and minerals.
Ocean Spray Cranberries Inc., LakevilleMiddleboro, Mass., recently rolled out the B1U
brand, a new beverage line featuring on-trend
functional benefits, simple ingredients, easy-tounderstand nutrition and recyclable packaging.
The line includes " I need power, " which is peach
kiwi-infused water with 10 grams of protein and
only 45 calories. The 16-ounce bottle contains
only three ingredients: filtered water, whey
protein isolate and natural flavor.
Premier
Nutrition
Company,
Emeryville,
Calif., has expanded its shelf-stable nutritional
beverage portfolio with three varieties of Premier
Nutrition Smooth and Creamy Shake with Oats.
The ingredient legend identifies three sources
of protein ― milk protein concentrate, oats and
calcium caseinate - that together deliver a
total of 20 grams of protein per 11-ounce bottle.
A serving also contains 7 grams of fiber. The
combo of protein and fiber is designed to help
keep consumers feeling fuller longer.
One of the more unique dairy-based beverages
to enter the market is for the over-21 crowd.
Wheyward Spirit, Portland, Ore., offers a new
specialty alcohol uniquely distilled to retain
its distinctive dairy flavor. The company is
repurposing excess whey to make this new spirit,
which can be consumed in the same manner as
vodka. During the fermentation process, yeast
converts the sugar (lactose) from whey into
alcohol. This product is then distilled. No lactose
remains in the final product so it is completely
lactose-free.
The spirit highlights whey's naturally delicate
and creamy characteristics and has a signature
flavor of oaky vanilla cream and warm spice
notes, rounded by a subtle pear aroma. Every
bottle of Wheyward Spirit diverts food waste,
adds value to local food chains and generates a
lower carbon and water footprint than traditional
grain-based spirits, according to Emily Darchuk,
founder and CEO.
